Healthy “Ice Cream”

fullsizeoutput_3205.jpegfullsizeoutput_320a.jpegWith the dog-days of summer coming to a close, (fingers crossed), I sometimes have a hankering for some good old fashioned ice cream.  But trying to stay in lines with my healthy eating lately, I need a good alternative.

I usually make a version of this with my students as a cooking lesson.  They don’t even miss the fact that it doesn’t have cream or eggs in it.  And, it hardly has any sweetener at all.

With just a few minutes of prep, you can have a sweet treat in minutes!

fullsizeoutput_320e.jpegStart by freezing 2 bananas that have been halved. fullsizeoutput_320f.jpegIn a blender, you will add the frozen bananas, 1 tablespoon honey,  1 teaspoon vanilla and 3/4 cups milk of choice.fullsizeoutput_3210.jpegI’m using unsweetened almond milk.fullsizeoutput_3212.jpegPuree and enjoy.  This makes 1-2 servings.

If you are more of a chocolate fan, add 1/2 tablespoon of cocoa powder to the recipe.

If you are freezing for later, take out 30 minutes prior to serving.  Add 1/4 more milk and blend again.



2 frozen bananas, halved

1 tablespoon honey

1 teaspoon vanilla

3/4 cup milk

Place all ingredients in a blender and blend until smooth.  Enjoy!
